Honey processing is a method of drying the coffee immediately after harvesting in which the mucilage is still left on the bean after the fruit has been removed. This allows the mucilage to slightly ferment on the bean and add a sweet complexity to the coffee.
This unique coffee comes from the La Gloria farm. Fatima Mercedes Maradiago is the name of the producer and she has been working on coffee farms since she started on her father's farm when she was eight years old. She now runs La Gloria in Honduras with her children. She believes that to create excellent coffee you have to love what you do and it shows.
